Comark offers auditing and food allergy training for those wishing to carry out internal, supplier and third-party audits and learn more about food allergies. The Auditing Skills course covers all the theory you’ll need. Courses cover everything from the opening meeting through to reporting and corrective actions. A food allergy is when the body’s immune system reacts unusually to specific foods or food additives which may involve the respiratory system, the gastrointestinal tract, the skin or central nervous system.

 


In severe cases this may result in anaphylactic shock. Although allergic reactions are often mild, they can be very serious. Every year, about 10 people die from food related anaphylactic shock.

Knowing the steps to take to reduce the risks of cross-contamination and identifying ingredients that can trigger symptoms all help allergen control.
